The Easiest Vegan Tart in The Universe .... oh! Matron!

Now if, like me, you are a lazy cook and don't enjoy minutes let alone hours in the kitchen rustling something up that will be consumed in three minutes, this is the recipe for you.


It will easily feed eight people with a salad or six greedy people (again, like me).


I almost feel like a fraud posting it as a recipe but here goes:


You will need:


  • 1 pack ready-made puff pastry sheet (check its vegan)

  • 1 x Jar Chilli Tomato sauce - the sort you put on pasta

  • Toppings - I used: Mushrooms, Chargrilled Artichoke Hearts, Sun Blush Tomatoes, Chargrilled Peppers, Black Olives.

  • Herbs de Provence

  • Pea Shoots


Preparation:


  • Bring bought pastry to room temperature.

  • Unroll and put onto backing tray with grease-proof paper in comes in underneath.

  • Put sauce on top leaving about 3/4 inch from the edge.

  • Place veg nicely on top - or throw it on - no rules.

  • Sprinkle with herbs.

  • Cook in oven according to instructions on box (approximately 15 minutes)

  • Remove and serve with salad and pea shoots scattered on top to look fancy.


.........no seriously that's it!!


You could:

  • make your own pastry

  • change the toppings or the tomato sauce (you could make that too)

  • buy one at Waitrose and spend 3x as much


Seriously though, how simple, how impressive looking and just enough time for a quick G&T whilst it's cooking - reeeeesult!
