A protein-packed dish - leftovers can be liquidised with water and made into a soup!
1 x Red Onion
1 x Garlic Clove
1 tsp Coconut Oil
Curry Powder (strength and amount to taste)
Cup Red Lentils
1 x Can Coconut Milk
1 x Can Chopped Tomatoes
1 x Can Barlotti Beans
1 x Can Butter Beans
Bag Baby Spinach
Chop onion, mince garlic and gently fry in coconut oil. When softened add curry powder, coconut milk, tomatoes and lentils.
Bring to simmer and simmer until cooked - you will need to add water from time to time to prevent sticking as the lentils cook.
Once cooked add tins of beans and spinach, warm through and serve.
Serve with brown basmati rice and a selection of vegetables - enjoy!
