All Hail Kombucha!

Kombucha - the latest fad? Well up to a month ago I had never even heard of I am almost addicted to it (in a good way).

What, you are asking IS Kombucha? Well, :- Kombucha consists of tea, sugar, clean water and a scoby. "Scoby" stands for symbiotic culture of bacteria and yeasts.

Sounds nasty that Scoby bit eh? Don't be put off, we use cultures in bread making, yoghurt, blue cheese, alcohol production to name a few. Left Field explains it for you.

The taste? Depending on the added flavors, it can taste fruity, floral, spicy, or herbaceous. It has a flavour similar to sparkling apple cider but with a more pronounced sourish taste (not screw-your-face-up sour). After the tea is fermented, the finished drink actually doesn't taste like brewed tea anymore.

The benefits of drinking it? It's delicious, that would be benefit enough but I have started coming in from work and reaching for a bottle of Buch instead of my usual wine or gin - that's got to be good - right? (although I did read that you could add your gin to the kombucha...hmmm)

It contains probiotics which are produced during fermentation. Probiotics are basically your stomach’s best friend. They replenish good bacteria in your gut. This promotes healthy digestion, better immunity to disease brought by bad bacteria, and can even help you absorb more nutrients!
